Geelong is one of Australia’s most beautiful cities. First named in 1827 meaning ‘a place of the sea bird over the white cliffs, it was proclaimed a city in 1910 and became a major industrial centre for Australia, with salt production being a major industry. Salt production commenced in Geelong in the 1890s. The Australian Flake Salt Company is proud to carry on this tradition.

The Australian Flake Salt Company has brought a unique technological approach to produce its South Salt Traditional Sea Salt Flakes. We use sea water brines to produce seasoning and finishing salt for the fine cuisine market. Our flakes are completely free from chemicals and additives. This unique production process enables Australian Flake Salt Company to avoid using sodium or potassium ferrocyanide to facilitate anti-caking.

Nineteenth century salt-making technology employed open pans with relatively inefficient low pressure steam technology to crystallise salt from salt brines. Artisan salt makers exercised great care in controlling the conditions of salting and were able to tailor the nature of the salt crystal to specifically match the requirements of the many different purposes. What set seasoning salt apart was the requirement to retain the many elements of the sea other than sodium and chloride.

To bring the sea salt flakes of the nineteenth century back, the Australian Flake Salt Company has returned to making flake salt the traditional way. We re-engineered the technology to develop one of the largest, single open pan salt making facilities in Australia. The salt flaking process still requires the artisan skills of old, alongside modern control systems, materials and equipment. We use the most suitable modern grade of duplex stainless steels, resulting in dairy-standard hygiene, machinery longevity and the highest possible product quality—while still retaining all of the delightful seasoning qualities of traditional sea salt flakes.

The water treatment system for the boiler is the astonishing Grander Water Treatment technology. The use of this system means that no harmful chemicals are released into the environment.

Our control systems are a combination of modern electronics and pneumatics, combined with nineteenth century style gears, chains and pulleys. These control systems allow brine temperatures, flake residence times and many other subtle variables to be controlled with high precision.

It is this intelligent combination of ingenious nineteenth century salt-making techniques and modern materials, equipment and control systems which results in the beautifully structured pyramid snowflake-like salt crystals that make South Salt Sea Salt Flakes seasoning choice for all food connoisseurs.

The processes used by the Australian Flake Salt company result in zero toxic discharges, and no salt is lost from our process.  Our boilers make use of the unique “Grander Water Treatment” process, which means that no harmful chemicals are used to treat the boiler water.  The “open pan” process of making salt means that sodium hydroxide and soda ash are not used the way they are in the production of modern vacuum salt.
